The “Pinay” Chardonnay from the site of the same name at Cornaiano is a full-bodied wine, mellow and characterised by youthful fragrance and a discreet aroma of exotic fruits.
Description: Bright pale yellow with greenish reflexes; on the nose it is delicate and fresh with an aroma of exotic fruits; full, firm and harmonious on the palate with tangy, fruity acidity. Will keep well for 3-5 years.
Food Choices: An ideal partner for delicately flavoured cold and hot dishes, fish, pasta, as well as poultry. Serve lightly chilled, 10-12° C.
Grape Variety: 100 % Chardonnay, very mature plantings, vines both pergola and espalier trained.
Sites: Girlan, Pinay vineyard (450 m elevation); soils comprise morainal and alluvial sand deposits; cool microclimate.
Yield: 55 hl/ha
Winemaking: Fermentation in stainless steel lasting approx. 14 days at a constant 18° C. Part of the juice is fermented in large oak casks and undergoes malolactic fermentation. The new wine is subsequently matured on the fine lees for 6 months; the two parts are blended and carefully bottled.
