Deion: Pale yellow with green reflexes. An opulent array of fruit aromas on the nose, bursting with elderflower, ripe citrus fruits, gooseberry and mineral flavours on the palate and zesty, crisp acidity.
Food Choices: Excellent to sip while relaxing with friends, it makes an excellent partner for asparagus frittata or asparagus dishes in general, grilled prawns, oriental stir fries, scallops with fresh herbs, goat's cheese, fish, especially zander or pike in butter sauce.

Winemaking: Grapes are gently de-stemmed and the juice is left to soak with the skins for several hours. After pressing the juice is allowed to settle and once clear, fermentation occurs in stainless steel tanks at cool temperatures. Malolactic fermentation is avoided. The young wine is allowed to mature on its fine lees for several months until shortly before bottling.
