Rocca Toscana Formaggi is the result of the merger of three important Tuscan cheese-making companies that have decided to combine their strengths and skills to offer themselves to the market in a more modern competitive perspective: the historic "Caseificio Spadi Enzo" of Roccastrada, the maturing company "Canti S.r.l.", whose owner Giancarlo Canti is in turn partner and founder together with Alessandro Rossi of "Canti & Rossi".
In the process of the creation of this new dairy registry, the production sites and workers of Caseificio Spadi, unrivalled productive soul and the natural lapillus curing caves, have been maintained, but logistics have been organized in a more efficient way and adapted to current needs.
Table Parmesan - an original Italian Stravecchio. The cheese is compact in his structure with little punching, like the Grana (Parmesan). With increasing maturity this cheese tends to become emery and fragile.
