Kräuterhexe - Nature's precious gibt: herbs
Mila's latest creation is called Kräuterhexe, which means "herb witch". Exceptionally mild and wonderfully aromatic, Kräuterhexe cheese is in a class all of its own.
The secret is wholesome milk fresh South Tyrol's mountain dairies finished off with a mix of 15 different herbs and flowers.
In order to fully develop the intense flavour of this specialty cheese, it ages for 30 days after salting-during which time it is turned and brushed with saltwater every day. At the end of the ripening period, the exterior of the edible rind is covered with aromatic herbs, calendula, and cornflowers: this gives Kräuterhexe its tantalising aroma and distinct flavour.

After traditional and transmitted recipe refined generations and with very modern processing technologies we produce for over 30 years decent bacon, spicy Kaminwurzen (smoked sausages), Gselchtes (smoked cattle ham) and other high-class specialities.
The Schwarzenstein is surrounded by a dry, black rind, which highlights its special nature and preserves its strong aroma. The natural cellar notes suggest the place of ripening of the Schwarzenstein. The inside of the cheese is pale to straw yellow and closed. The Schwarzenstein has a firm and crystalline texture and is slightly melting in the mouth. The long ripening process gives the hard cheese an aromatic spiciness and notes of roasted chestnuts, dried fruits and honey. In the aftertaste, slight caramel and chocolate notes are recognizable. The taste is very complex, powerful and unmistakable. A cheese with character and recognition.
The special herbal mixture after old traditional farm preion and smoking with selected, Sarntaler coniferous wood (mountain pine pine and juniper) give the "Original Grammhof Speck" the unique and unmistakeable taste.
Toblacher pole cheese dairy Three Peaks, mild decent cut-cheese, matured at least 6 weeks.
