Fresh and sweet flavour, tipical wood notes, light resinous aroma. Intensive and very long finish.
Roasted it tastes especially good and is best served with sauerkraut or roast potatoes - suitably in addition a chill Bavarian beer.
Cut cheese bovine raw milk, Appearance: carbon-coloured rind - some white mould present, Aroma: cellar-like aroma - earthy, Flavour: milk - sourish - cinnamon aftertaste, Consistency: rubbery, Maturation: 8 weeks in the brick cellar
A hard cheese that is left to age for about a year and a half. The wheels are then wrapped in chestnut leaves which transform them and enrich them with a strong, exceptional flavour. It pairs well with great Langa wines but is ideal with important dark craft beer too.
