The Cereal-Fed Iberian Ham and Shoulder are produced according to the traditional temperance which its sweet fragrance and its smooth meat deserves. Matured at the natural driers of Victor Gomez in the ‘Sierra de Béjar’, these superb Cereal-Fed Iberian Hams and Shoulders reveal a purple-pink coloured tone with fine strips of fat which melt in the mouth, giving a bouquet of intense pleasure. The Cereal-Fed Iberian Loin is produced with a selection of the best and finest cuts of cereal-fed Iberian loin, which, accompanied by the quality of a careful production process, result in this exquisite dish.
Its artisan processing and prolonged ageing period at room temperature with regulated humidity ensure the unmistakably unique aroma, colour and flavour of this dry-cured Iberian loin.
Still today Casa Modena respects this tradition when producing rigorously a Dop product, or rather certificate in the respect of rigid rules foreseen by the law: only meats of national swines are used exclusively, checking the additives and each phase of the working.
