Khorasan Sicilian Flour Khorasan Flour is distinguished by its very high and full ears of grain and by the elongated grains that protrude the glumella, the "skin" that covers them: even for non-experts it is impossible to confuse it with durum wheat. It is considered a highly digestible wheat because of a low gluten index and a gluten that is not very tenacious, a characteristic that it shares with all ancient grains. And it is back in vogue also because of its particular adaptability to organic cultivation (another characteristic that it shares with all ancient grains). Many studies conducted on Khorasan recognize several beneficial properties, including: the antioxidant effect (due to the presence of selenium)... the beneficial effect on the cardiovascular system (for the presence of vitamin E) the beneficial effect on the nervous system (for the presence of vitamin B3) the beneficial effect on blood glucose (for low glycemic index).
