Homemade Pasta Callari relies on the tradition and quality of the ancient and well-known Sicilian agronomic culture in the processing of the best local durum wheat and aims to bring to the table a healthy, traceable and 100% Sicilian product.
The climate, the spring water and the soil of this marvelous island add quality and prestige to this product of the highest level: stone milling with dry system at low revolutions to avoid overheating of the product and preserving its organoleptic properties , slow extrusion, bronze drawing, long drying times (30-48 hours) at low temperatures, manual packaging do the rest.
These are the ingredients that transform Pasta Callari simple pasta to a real pleasure path.
Still today Casa Modena respects this tradition when producing rigorously a Dop product, or rather certificate in the respect of rigid rules foreseen by the law: only meats of national swines are used exclusively, checking the additives and each phase of the working.
