The climate, spring water and soil of this marvellous island add quality and prestige to this product of the highest level: stone milling with a low speed dry milling system to avoid overheating the product and preserve its organoleptic properties, slow extrusion, bronze drawing, long drying times (30-48 hours) at low temperatures, manual packaging do the rest.

Compared to modern modern grains it is rich in antioxidants such as polyphenols. It is rich in minerals such as Selenium, Potassium, Magnesium, Phosphorus, Zinc, Calcium and Iron which are higher in value than modern grains. It promotes good cardiovascular functioning and preserves the health of our eyes thanks to its high content of vitamin E.
Zinc and Magnesium strengthen teeth, bones and the immune system. It is hypoglycemic and at the same time hyperprotective, making it an ideal food in the diet of diabetics and athletes.

It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).
