To be enjoyed with the eyes and nose even before the mouth. A refined pink colour heralds scents of the undergrowth and fruit compotes. The Yin and the Yang of life represented by Chardonnay and Pinot Nero left to rest on yeasts for more than 24 months. Sensual, very enjoyable and eclectic. A perfect wine in any situation and with any food. To be tried absolutely with fine salamis and cold cuts and with raw shellfish.
TYPE OF SOIL: Partly of morainic origin, loose, drained and with an abundant skeletal texture.
TYPE OF GRAPES: 60% Chardonnay 40% Pinot nero different vineyards.
YEAR: This is a Franciacorta "sans année", which does not bear the year of harvest because it is obtained the skilful combination (assemblage) of the best wines of different years; the addition of pinot nero, with a slight maceration on the skins, gives it a good structure and elegant body.
HARVEST: Between the end of August and early September when the grapes have reached the correct sugar ripeness, but still have considerable acidity and freshness.
AGEING: To be disciplined, a minimum of 30 months after the harvest, of which 24 on yeasts. After disgorgement, the bottles rest in the cellars for another 3-4 months
COLOUR: A soft pinkish shade, with highlights that veer towards salmon pink and which may vary slightly one year to the next, due to the different degree of ripeness of the pinot nero grapes.
BOUQUET: Intense, of small red fruit, with notes of fruit compote
FLAVOUR: A good structure, fragrant, intense, balanced, excellent persistence and a pleasant body
PERLAGE: Fine and persistent, abundant creamy mousse
SERVE WITH: Recommended throughout the meal, especially with pasta and flavoursome meats, ideal with cheese and desserts.
