Südtiroler Spitzbuben
  • 150 gr. butter
  • 125 gr. sugar
  • 1/2 Pck. vanilla sugar 
  • 1/2 pinch of grated lemon zest
  • 1 pinch of salt
  • 2 eggs
  • 300 gr. flour
  • ½ pack. baking powder
  • apricot jam for coating
  • powdered sugar for sprinkling

 

Preparation:

Beat the soft butter together with the sugar until creamy. Stir in the vanilla sugar, lemon peel, salt and eggs, then mix the flour with sieved baking powder, add and knead into a dough. Cover and let rest in the fridge for 30 minutes.

Roll out the dough to a thickness of approx. ½ cm and cut out rings one half, round biscuits one half and bake for approx. 8 - 10 minutes in an oven preheated to 180 degrees. Let the biscuits cool down and spread with the jam. Sprinkle the rings with icing sugar and place on the biscuits.
