Our wild boar specialities are particularly tender, both in taste and consistency. With their fine spiciness they crown every snack time and can be combined in many ways.
Kofler Speck is a South Tyrolean family enterprise with passion for bacon, sausages and meat products. After traditional and transmitted recipe refined generations and with very modern processing technologies we produce for over 30 years decent bacon, spicy Kaminwurzen (smoked sausages), Gselchtes (smoked cattle ham) and other high-class specialities.
A little milder spicy than the "Kaminwurze", epicures estimate above all the slightly sweetish taste.
Our high-class butter is produced exclusively of pasteurised fresh cream. The fine difference becomes apparent! The well strokeable, pale yellow butter of slightly sweetish creamy taste comes everywhere with pleasure freshly on the table.
Is there anyone who doesn't know it? The mixed meat dish, called 'Schlachtplatte', is well known to South Tyrolean lovers. Surfleisch' is pork that is seasoned in a special mixture of spices, which gives it its characteristic taste.
Small but good. Many stories surround the creation of these little delicacies. In the Middle Ages, for example, it is said that innkeepers used to make particularly small sausages, which they could sell to their customers through the keyhole after the premises had officially closed. Even Goethe, the 'prince of poets', is said to have fallen in love with the delicate pork, salt, pepper and marjoram sausages, so much so that he had them sent by post to Weimar.
