Crossing glaciers, climbing cliffs, the air is clear, visibility virtually unlimited. Freedom, lightness, sensuality, the sensation of wide horizons. Desire and curiosity to set off for new, unknown shores. At the core of the fragrance hay, mint and the unmistakable whiff of pine and larch. Firm enough to venture into high alpine regions. Delicate flowers, grasses, mosses and lichens, which brave all weathers complete the mildly tart, unique fragrance.
It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).

The raw material used, i.e. back fat, comes heavy pigs bred in Italy. The carefully selected lard varies in thickness 6 to 8 cm. The product is salted in brine. High quality spices and aromatic herbs are spread on its surface. Taste is savoury and slightly aromatic; aroma is inviting. Flavour: Aromatic
Colour: intense straw-yellow with green reflexes. Aroma: complex bouquet with exotic fruits, white pepper, nuances underlined with light woody notes. Taste: good structure, harmonious acidity with a long finish.
Bright straw-yellow with a green shimmer. Semi-aromatic, pronounced, ripe fruit aromas reminiscent to apricot and peach, floral notes. Medium bodied, elegant, lively and dry.
