Characteristics: TYPE - Fortified white wine. CLASSIFICATION - Typical Geographical Indication Sicily (IGT). GRAPE VARIETY - Moscato di Alessandria and Moscato Bianco. 1st YEAR OF PRODUCTION - Vintage year 1998. PRODUCTION AREA Vineyards grown on the island of Pantelleria and in the Noto hinterland. SOIL Pantelleria:volcanic origin, very dark and rich in mineral salts. Noto: white soils, extremely calcareous and arid. ALTITUDE - In both cases between 50 and 150 meters msl. VINEYARDS Traditional bush-trained, in small "ditches" protected against strong African winds in Pantelleria and high and cordon-trained in the Noto area. CLIMATE - Insular, hot, dry and very windy. VINTAGE By hand, advanced maturity, during the 1st week of September. VINIFICATION Soft pressing of the grapes, short maceration on the skins and fermentation at controlled temperature (17° - 18° C.) to reach the alcohol content of 5° - 6°.Addition of distilled wine until 16° is reached to stop the fermentation process and preserve most of the must's sugars and their terpene aromas. AGEING - Up to spring to favour the natural clarification. MATURING - At least 2 months in bottle. TASTING Colour - bright golden colour with light topaz highlights. Aroma - intense and harmonious, sharp Muscat scents with clear notes of apricot. Flavour - full, smooth, with notes of acacia honey and pleasant finish of dried figs and raisins. ALCOHOL CONTENT - 15.5 v %. RESIDUAL SUGARS - 120 g/l. PRODUCTION OUTPUT 550,000 750 ml. bottles and 14,000 375 ml. bottles. RECOMMENDED GLASS - Fine medium-sized, transparent tulip glass. STORING - Cool (13° - 15° C.) room, not moist, away direct light. LIFE - To be drunk in its youth, preferably two years at most.
Recommended with: Sweets and pastries, fresh and dried fruit. Excellent with spicy cheeses.

The South Tyrolean farm bacon is a culinary event of the special kind. An exclusivity, only in tiny amounts available, for gourmets oriented to pleasure to whom among other things also is aware of the great importance of an adequate fat portion. The meat comes pigs who are held appropriate to the species on small-structured South Tyrolean farms and are nourished freely of genetic engineering with especially well-chosen feed. The result are the pigs who prove an especially mellow bacon.
