Cultivation / Soil: Vineyard 100m above sea level, family estate in the area of Colognola ai Colli, type of cultivation: Guyot and Pergola, 20-25 years old vines / volcanic soil
Grape variety: Garganega 80% and Chardonnay 20%.
Manufacturing process: The grapes are thinned, harvested by hand in boxes, gently pressed at very low temperatures (8-9°C) in an absolutely oxygen-free environment, fermented at a controlled temperature of 14-15°C without any addition of sulphate and nitrate salts, stored in a steel tank with weekly circulation until spring, cold, sterile bottling.
Colour / Bouquet / Taste: Soft straw yellow / Fruity and delicate, reminiscent of citrus fruits and medicinal herbs such as mint, sage and tymian / Fresh, clean and well structured, beautiful persistence with a continuous development.
Storage / Serving temperature: The wine can still mature up to 2-3 years after the grape harvest.
Serving suggestions: Excellent as an aperitif, with antipasti, pasta dishes with herbs and light fish dishes.
