Cultivation / Soil: Vineyard on the hill of Monte Garbi at an altitude of 350m, Age of the vines: 25 years, calcareous soil of volcanic origin
Grape variety: Corvina (60%), Rondinella (20%), Croatina (10%) and Oseletta (10%)
Manufacturing process: The grapes are thinned, harvested by hand in crates, gently pressed at low temperatures in an absolutely oxygen-free environment, fermented at controlled temperature without any addition of sulphate and nitrate salts, malolactic fermentation, matured in 500l French oak barrels for 12 months (50% new barrels and 50% 2nd passage barrels), short refinement time in the bottle.
Colour / Bouquet / Taste: Deep ruby red with purple reflections / Intense, complex and complex, reminiscent of flowers such as violets and iris, ripe red fruits combined with a hint of roasted coffee / Dry, full-bodied and soft; very balanced with a beautiful persistence.
Storage / Serving temperature: The wine can still mature up to 4-5 years after the grape harvest. Serve at a temperature between 14-16°C
Serving suggestions: Excellent with sophisticated pasta dishes, red meat, game and non-spicy cheeses of medium ageing.
