Cut cheese bovine raw milk, Appearance: washed rind - ivory-coloured interior, Aroma: vegetable aromas, Flavour: resin - tends towards salty, Consistency: soft - rubbery, Maturation: 6-8 weeks in the natural cellar.
Soft cheese bovine milk, Appearance: small square, Aroma: Spice marks, Flavour: sweet-salty, Consistency: softy-creamy, Maturation: 1 month.
Fresh cheese 3 milks: bovine milk, goat's milk and ewe's milk, Appearance: outside milk mould - creamy white dough; Smell: Yeast nuances - creamy; Taste and aroma: slightly salty - harmoniously; Consistency and structure: smooth dough - softly; Maturation: approx. 15 days in the maturation cell.
Refined, harmonious, lingering aroma and sapidity. At best with fish preparations. Excellent as an aperitif but even better as an all-meal companion.
