Vinification: Soft pressing of the grapes with fermentation of one part (about 50%) in barriques and the other in temperature-controlled steel. The two parts, at the end of fermentation and an aging period of 5 to 6 months in the same fermentation containers, are assembled and the wine prepared for bottling.
Description: Visually striking for its brilliance and brightness, the color is straw yellow with a greenish hue. The scent is very variegated and elegant; floral notes (hawthorn and magnolia) and fruity notes (grapefruit and pineapple) linked and amalgamated by hints of vanilla on which the characteristic mineral notes are grafted with aging. The taste is fragrant, full-bodied and structured, articulated in scents that refer to olfactory sensations, but well balanced with a persistent aftertaste that fades to almond notes.
Matching: Pair with fish starters, crustaceans, white meats, cheeses of medium seasoning, combined with saffron.
