Vineyards and soil: Laimburg ruins: south and southeast facing slopes with sandy alluvial and porphyry soil, 300-350 metres above sea level. Ölleiten vineyard near Caldaro/Kaltern: southeast-facing cliffs with moraine soil, 300-350 metres above sea level. Gries district of Bolzano/Bozen: sandy loam soil, 290 metres above sea level.
Training Form: Espalier and pergola
Vinification: Slow fermentation with repeated pump-overs for optimal extraction of colour and aroma. 20 months barrique aging.
Deion: Deep purple in colour with garnet-red highlights. A blackcurrant and melissa bouquet accompanied by wood aromas. Sturdy in structure, packed with tannins and long-lasting in finish.
Serving Suggestion: Ideal served at 17° C with grilled or roasted beef, game or sharp cheeses.

Cabernet Sauvignon is a wine full of strength and complexity. It characteristic scent of forest berries, peppers and liquorice is underscored by its harmonic acidity and hefty tannins, which are an important condition for long life and successful maturing.
Color: Dark ruby red with light purple reflections Aroma: Elegant, spicy and fruity with notes of chocolate, tobacco and pepper, as well of the flavor of mature Amarena-cherries and a hint of wood Flavor: Elegant and fresh structure with mild and very well bounded tannins, fruity, salty and juicy with a pleasant acidity and a smooth-tongued and elegant finish Best enjoyed: with braised and grilled meats and venison, as well as with tasty-ripened cheese.
Pinot Bianco Sirmian grows on the southern slopes above Nalles. It has aromas apple, citruses and pineapple which make the wine full and elegant. On the palate it has lively acidity and is harmonious on the finish.
This elegant and fruity Chardonnay is cultivated on clayey and calcareous grounds. The fermentation takes place in durmast barrels through the malolactic process. After that, the wine is left to mature for 11 months. Ripe fruits fragrances together with the full-bodied taste, the well-balanced structure and the pleasant perfume, are the characteristics of this wine.
Brilliant, gold yellow colour with a green shimmer. Very rich, complex, still quite closed aroma. Burgundian style with a delicate creaminess, some toasty oak and ripe tropical fruit. Touches of vanilla and roasted almonds. Quite rich, well-structured though elegant flavour, harmonious, with a pungent, fresh acidity to match the depth of the fruit and the oaky backbone.
