Characteristic: The Südtiroler Edelvernatsch, also known as Schiava, is a light-bodied wine, whose color is light ruby to deep ruby red. It is pleasant and fruity on the palate, often with a touch of bitter almonds.
Recommendation: This wine is ideal as an aperitif, an accompaniment to appetizers, or to typical Tyrolean fare such as speck and sausage, but also to lighter meats and mild cheeses.

It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).
The Pustertaler Salamini Villgrater are produced of beef and pork in the physical white frost procedure, are mildly spiced, with light red wine taste and afterwards dried in home mountain air.
