BellDèS is the cooperation with the vineyards from our winemaker Christian Bellutti and our vineyards (DèSilva). The whole vineyards from both have to be manufactured in our Winery and the wines are made especially for the Gastronomy like Restaurants, Hotels and so on. Our Goal is to work just with a selected quality and an interesting price class of autochthonous varieties like Schiava, Lagrein and Gewürztraminer to show the customer the typical varieties from this region.
Vine variety: 100 % Gewürztraminer - autochthones vine variety
Description: The native tendril, Gewürztraminer, conquests the palates thanks to its intense aroma of roses and cloves. Ideal as an aperitif. Perfect with fish based antipasto, shellfish and lasagna.
Position: Several areas around Tramin village
Land: Loamy
Harvest: Various harvest times because of the classical harvest and a little later for the higher vineyards above see level. Middle to end of September
Development: White wine pressing. Depending on the ripeness, a short standing period is carried out after mechanical removal of the stems and specifically macerated. The mash is then pressed and the must is left to stand in a stainless steel tank for natural clarification for one day. The must is then fermented in a stainless steel tank at controlled temperature. It is important that, after fermentation is completed, we also use the SurLie process in order to keep the fine yeast afloat and thus guaranteeing the extraction and development

Food recommendation: Shellfish and crustaceans, grilled sea fish and white meat and also for Asian dishes, Antipasti and also to various mould cheeses made of goat, sheep and cows milk. Also particularly interesting with pâtés.
The brilliant straw-yellow color is tinged with light green; the aromas vary quince to pears to toasted almonds. On the palate, the wine is full-bodied and racy, with a round and harmonious finish, thanks to aging in barriques.

This is a highly individual wine and a copybook Gewürztraminer: full, bright straw yellow, concentrated with a strong aromatic character reminiscent of dried flowers and rose petals which develops and intensifies in the glass. Full-bodied, luscious but dry on the palate, the opulence cut by vibrant, firm acidity.
Brilliant, straw-yellow colour with light green hints. The aroma is delicate with pronounced notes of subtropical fruit. Quite intense flavour and a good, medium-bodied structure, coupled with lively acidity.
