Viticultural Practices: this wine is made certified organic grapes vineyards that are farmed according to biodynamic methods of viticulture (Demeter certification).
Grape variety: Merlot.
Description: deep, intense cherry-red colour with ruby tints. Pronounced, complex aroma with concentrated fruity notes (red and black berries), delicate spice impressions (juniper, liquorice) combined with elegant oak. Quite powerful and rich on the palate. Long lasting with a fresh aftertaste and well balanced tannins.
Suggested foods: veal, lamb, duck, venison, cheeses.
Origin: Punggl vineyard south of Magrè at an altitude of 230 metres (750 feet). Soil is sandy, gravelly and chalky. Very warm mesoclimate.
Age of vines: 47 years.
Vinification: fermentation and extended maceration for 14 days in stainless steel tanks. Matured for 18 months in French oak barrels (Alliers and Nevers), of which 2/3 new.
Color: fresh light yellow with slightly greenish nuances. Smell: This cuvée has a multifaceted structure with a hint of herbs and spices, including aniseed, mint and sage, as well as nuances of fruit aromas, especially apricot, mandarine, honeydew melon, maracuja and passion fruit, all underpinned with salty mineral components. Taste: On the palate, Nova Domus is complex and delicate, offering a creamy softness in an interesting symbiosis with an aromatic minerality, and has the texture for a very long finish.
