Here in what is probably the oldest Pinot Blanc vineyard in Alto Adige, with vines planted since 1899, the grapes thrive and prosper for our most exclusive of wines.
Inspired by this significant project, by the small church just above the vineyards, and by St. Paul, who gave our winery its name, we elected to baptise this unique wine with the name of SANCTISSIMUS.
The small harvest due to the age of the vines together with south-facing slopes guarantees the very best of grapes, hand-harvested with the utmost of care. Our reverence for this outstanding wine has impelled us to preserve the processing and ageing technique of a vinification system which is somewhat unusual in Alto Adige, and entails mild fermentation on skins followed by maturation in terracotta amphorae.
Production is strictly limited to around 2,000 bottles in 1.5L magnum and 0.75L format, ready for distribution only after lengthy maturation in the bottle. Enjoy this exclusive white wine rarity in all its glory!

The wine presents a bright, golden yellow with green reflections. The nose is evocative of peaches and elderberry blossoms with fine citrus notes. On the palate, it reveals a lively flavor full of finesse, with good acidity and hints of mineral.
