Processing: Temperature-steered alcoholic fermentation, 4 months of development on the fine yeast in the steel tank.
Character: Luminous, discreetly golden brown colour, smell reminding in quinces and William's pears, harmonious-juicy and corpulent taste
Serving temperature: 12-14 °C
This bacon is well suited for hors-d'oeuvre courts.
