60% Vernatsch (Schiava), 40% Lagrein. Blended 2 South Tyrolean autochthonous grape varieties. Red wine South Tyrol.
Planted in a mixed set and vinified, they form the framework for this special wine that grows in Bolzano-Kampill. Loamy, sandy soil, relatively shallow. Volcanic origin (porphyry) with a lot of quartzite slate.
Hand picked, 36 hours maceration / spontaneous fermentation in stainless steel, then 50% of the mass for 4 days on the fermented mash Caroline in stainless steel.
Excellent with light starters or main courses with white meat.

We see ourselves as cultural and natural ambassadors. For me, being a wine grower means first and foremost the area, the place where we live, the vintage and our way of life. In order to be able to do this unadulterated, we work bio-dynamically. Our steep vineyards around the Bozen valley basin, which we process by hand with great effort, are the basis for producing our natural wines. Spontaneous fermentation, long stay on the yeast, no fining and filtration, minimal amounts of sulfur and a lot of patience and feeling are the stages the grape to the wine. We accompany the entire process ourselves in order to produce unique, characterful wines.

For this creation we use a hand made grey cheese with edible vegetal charcoal. Hence the name Ligni comes (Latin "carbon ligni"). A rustic cheese with intensive-substantial smell and easily sourish aroma. Grained and mellow consistency. Excellent as an hors-d'oeuvre in combination with olive oil.
