VINIFICATION: Temperature-controlled fermentation in rotor tanks and vinification in small oak casks (Allier, Nevers, and Jupille) for fourteen months, followed by aging in large wooden barrels.

ABOUT THE WINE: Cabernet Sauvignon and Cabernet Franc were introduced to Alto Adige in the second half of the nineteenth century. The warmest slopes above Kurtatsch turned out to be perfectly suited for these French newcomer varieties as early as the first historical growing period. The Kirchhügel [church hill] at the foot of the Kurtatsch Church is a particularly sheltered area at the edge of the village center. Snow and frost always melt back quickly these extraordinarily warm and loose soils. At this location, where daytime warming lingers on, the demanding Cabernet Sauvignon can completely open up its delicate fruit (black currants, blackberries, crushed elderberries), while the spicy Cabernet Franc unfolds its aromas of herbs, spices, and vegetables (pepper, red bell peppers, and peppermint). Even in particularly sunny years, "Kirchhügel" Cabernet does not turn out to be too heavy or overpowering. A vein of acidity typical to the Alto Adige Lowlands provides the muscular body with complexity and an impressive staying power in the bottle. Those who have a little patience and can cellar their "Kirchhügel" Cabernet for a length of time will be rewarded with tertiary aromas that are reminiscent of an oriental tea ceremony: cedar, suede, tobacco, roasted hazelnuts, sponge cake, and dried blackberries.

The Kurtatsch Winery is one of the most important winegrowing cooperatives in South Tyrol and is located in the small municipality of Kurtatsch in the heart of the Überetsch region. The history of the winery goes back to 1900, when a few local winegrowers joined forces to produce wine together. Today, the Kurtatsch Winery has around 200 members who cultivate over 20 different grape varieties on a total of around 190 hectares of vineyards. The winery relies on sustainable cultivation of the vineyards, which is supported by the use of modern technologies and careful manual work by the winegrowers. The result is wines of the highest quality that regularly win awards at national and international competitions. The Kurtatsch winery is particularly well known for its white wines, first and foremost the Sauvignon Blanc, the Chardonnay and the Gewürztraminer. But also the red wines of the winery, such as the Lagrein or the Vernatsch, convince with their intensity and their balanced structure. In addition to the high quality of its wines, the Kurtatsch Winery also stands out for its innovative strength. For example, it received an award for its "Cold Cellar" project, which significantly reduced the winery's energy consumption with the help of solar panels and geothermal energy. All in all, the Kurtatsch Winery is one of the most important addresses for wines South Tyrol and stands for a successful combination of tradition and modernity, manual work and technology, as well as quality and sustainability.

The Chardonnay is characterized by classy opulence with many exotic fruits in aroma and taste along with delicate, delicious toasty aromas. The complex bouquet brings to mind apricots, coconuts and bananas. Extract and acid form an attractive balance, the taste is round, and equally strong and fine, with velvety fruit and well-integrated tannin. A complex, elegant Chardonnay with enormous storage potential. Grape varierty: 100% Alto Adige Chardonnay.
The aroma bouquet is intense and varied, reminiscent of the first fruits of summer: sweet cherries, wild strawberries, red currants.
