Vigneti: Il Pinot Grigio viene coltivato a Cornaiano sulle colline dell'Oltradige, ad un'altezza di 450 - 500 m s.l.m. in vigneti ben areati. Il terreno di produzione è ricco di minerali, formatosi da sedimenti dell'epoca glaciale.
Vinificazione: Dopo la vendemmia l'uva viene pressata immediatamente. La fermentazione avviene in contenitori d'acciaio a temperatura controllata. In parte (ca. 10%) si è proceduto con la fermentazione malolattica.
Note sensoriali e suggerimenti: Il Pinot Grigio dà grappoli piccoli dagli acini di color ruggine, quasi brunastro. Sullo stesso ceppo si trovano talvolta uve di Pinot Bianco e Grigio, che appartengono alla stessa famiglia dei Pinot della Borgogna. Il suo sapore è delicato e morbido. Si accompagna molto bene ad asparagi, pesce e carni delicate.
