Grape variety: 100% Cabernet Sauvignon; in 1989 the vineyard was planted with Veronese arbours.
Notes on production: This vine variety with an international quality label is growing in a new area where some characteristics such as microclimate, drying method and tradition go hand in hand.
Manufacturer: Winery Marion in the Marcellise valley, at the foot of the hills at 100 m.a.s.l. The vineyards grow on slightly sloping slopes in a north-south direction.
Soil: Limestone soil with some clay and stones; pH 7.80 - 8.50; organic fertilisation is carried out every four years with the addition of microelements as required.
Harvest, production and refinement: Some of the grapes are harvested mid-September, stored in boxes and dried for 30 to 40 days in well-ventilated porches. In the first ten days of October, the grapes are harvested and left on the vines for additional ripening. After a separate pressing and fermentation process, the wines are stored in Slavonic oak barrels (350 litres). Then it is mixed and filled.
Deion: Intense ruby red colour with violet nuances; the scent reminds of small fruits growing in the undergrowth and spices. In the mouth it develops soft and round, with a persistent aftertaste.
Drinking temperature: 15 - 18°C.
Food pairing: Good with red meat, game, spicy and mature cheeses.
