Roasted over olive tree wood
A blend of selected coffees wood-roasted using a traditional slow roasting process. Each type of coffee is roasted separately in order to obtain the most appropriate degree of roasting for that particular variety.
Before blending, each coffee is tasted in order to avoid any defects and guarantee the organoleptic qualities of the finished product.

Hard cheese goat milk, Appearance: no rind - dirty white interior, Aroma: earthy scent - goats - hay and truffle, Flavour: intense - persistent, Consistency: crumbly - dry, Maturation: 6 months in pits.
Soft cheese bovine raw milk and goat raw milk, Appearance: square grey rind - milky white, Aroma: sourish - milky - hints of goat's milk, Flavour: some hints of goat's milk - depending on the level of maturation, Consistency: soft - creamy, Maturation: 8 weeks in the natural cellar.
