For the gourmets among us, the delicious wild boar ham is recommended. The meat of the wild boar is not comparable to that of the domestic pig. It is aromatic and dark red in colour. Furthermore, the meat is leaner and firmer than that of the domestic pig. Production The wild boar legs are salted by hand, mildly smoked and then dried in fresh mountain air. This results in a noble taste. Enjoyment Wild boar ham is a special product for special occasions and can be enjoyed as an exceptional starter. Finely sliced and marinated with olive oil and balsamic vinegar, it is a product for special occasions. Of course, wild boar bacon is also excellent to enjoy as a snack.
The South Tyrolean Salami Roe Deer type Villgrater is produced of 50% of Roe deer meat and 50% of pork, it is spiced on natural base and afterwards air-dried for several weeks.

Veal sausages have also found in the South Tyrolean kitchen their firm place and are generated after Old-Bavarian recipe. Traditionally it is enough to warm up the veal sausages in hot water and to serve with sweet mustard and a lye pretzel. In addition a Bavarian wheat beer tastes especially well. However, they also enrich records with "cooked Mixed" and Bozner sauce.
Is there anyone who doesn't know it? The mixed meat dish, called 'Schlachtplatte', is well known to South Tyrolean lovers. Surfleisch' is pork that is seasoned in a special mixture of spices, which gives it its characteristic taste.

The classical bacon is produced of the best piece of the leg. Refined with spices, mountain herbs and salt, the bacon is pickled for 20 days. After a cold smoke phase with beechwood filings the bacon sides are matured for a total of 5 months in our pure mountain air at controlled temperature.
