Furthermore, the meat is leaner and firmer than that of the domestic pig. Production The wild boar legs are salted by hand, mildly smoked and then dried in fresh mountain air. This results in a noble taste. Enjoyment Wild boar ham is a special product for special occasions and can be enjoyed as an exceptional starter. Finely sliced and marinated with olive oil and balsamic vinegar, it is a product for special occasions. Of course, wild boar bacon is also excellent to enjoy as a snack.

The South Tyrolean wild boar's salami Villgrater is produced of 60% of wild boar's meat and 40% of pork, is dried mildly spicy with a light red wine mark and afterwards in home mountain air. The wild boar's salami belongs to the particular specialities of the butcher's shop Villgrater!
The Pustertaler salamis smoked Villgrater is produced of beef and pork, the structure easily graind, mildly smoked, spiced with fresh mountain herbs, afterwards is dried for several weeks.
Selected spices like rose paprika, sharp chillis and different herbs are sprinkled in the fine-grained beef, afterwards mixed and controlled with pork and other ingredients, matured slowly at low temperatures, results in an incomparably piquant but not too sharp taste mark. Very much appreciated for pizzas and snacks.
