This particular raw ham is a Tirol speciality and is won(got) the imperial part, a fragment of the pork club. It is the quality a relatively tender bacon.
For the emperor's part bacon the pieces of meat with fresh, aromatic mountain herbs are spiced and drily salted. He is without sticking bacon portion and dries easily, smoked in high mountain air.
This bacon is well suited for hors-d'oeuvre courts. Cut emperor's part bacon paper-thin and put some olive oil, lemon juice, rucola and Parmesan on it.
It appears as a clear green colour with gold reflections. It results captivating and sharp, with an outcome of green olive with medium intensity, where smells like cut grass and olive leaves are followed by elegant notes of cardoon, artichoke, bitter almond and lettuce. Strong and rich in its vegetables notes made of official herbs with a heavy and well dosed bitter and spicy taste. It is ideal with starters of porcini mushrooms, tomato bruschetta, tuna salads, octopus marinade, bean soups, grilled swordfish, red or black grilled meat and seasoned cheeses.
A dense porous vinegar aged for many months in wooden casks. An unmistakable sweet and sour aroma, well-proportioned flavour to delicately accompany any course. The rich smooth flavour is the fruit of a painstaking selection of raw materials and the aging process in casks made of different woods.
Roasted over olive tree wood A blend of selected coffees wood-roasted using a traditional slow roasting process. Each type of coffee is roasted separately in order to obtain the most appropriate degree of roasting for that particular variety. Color: brilliant deep ruby red Smell: The primary fruit aromas of dried plum and cranberry combine with the herbal aromas of mint and eucalyptus and a hint of black pepper to create a many-faceted bouquet. Taste: With its sturdy tannin structure and rich fruit aromas, the Merlot can develop to the full on the palate to display great complexity with depth and length.
Medium ruby colour with garnet tints. Clean, uplifted berry character, young and quite plump aroma with some spiciness (pepper). Medium bodied, with soft fruit flavours and some light tannin and a little acidity on the finish giving a nice freshness.
